Changed hands
Salt Hank's opened on Bleecker Street in June 2025 with a menu of essentially one thing: a French dip. Henry Laporte, who built an audience online as Salt Hank, opened it with Ian Henderson-Charnow and chef Daniel Rubenfeld. The lines got long enough that a live camera feed tracks the wait.
On August 14, 2026, the shop was sold. Wonder, the food hall and delivery company founded by e-commerce billionaire Marc Lore, acquired it outright. As Eater NY put it, the physical restaurant and its entire branding and menu have been sold to the company. Financial terms were not disclosed.
What makes this worth reading is the pattern, not the single deal. Wonder has been buying beloved New York restaurants and scaling their food across a network of more than 140 outlets: Blue Ribbon Fried Chicken, Mighty Quinn's BBQ, and now Salt Hank's, with Di Fara and SriPraPhai already on the platform.
The founders were candid about why they said yes. Laporte said other suitors came with pressure to lower food costs, change suppliers or cut corners, and that Wonder was the only partner that did not ask for that. Rubenfeld joined Wonder's culinary team, while Laporte and Henderson-Charnow stayed involved.
The original Bleecker Street shop remains open, and the sandwich may well stay excellent. But the thing you are buying changed hands: the recipe now belongs to a venture-backed platform whose business is putting restaurant brands into delivery kitchens at scale. That is what the score reflects.
